It's been a whirlwind of a week prepping for the Super Bowl this Sunday!  I've been busy creating some killer appetizer and dessert recipes and this one is probably my favorite of them all!  As a former carb-addict in recovery with the Ketogenic Diet, I do miss some of the lovely flavors things like breadsticks and pizza provided.  Since the dough isn't allowed anymore, I took it upon myself to find a Keto-alternative that would keep my cravings at bay while being seriously satisfying.  This Cheesy Cauliflower Breadstick recipe does just that and packs a flavorful punch (or tackle!) that's a perfect grab-n-go snack for any party!

Bacon Wrapped Mozzarella Sticks

Bacon and cheese.  A match made in football fan heaven!  I dare say this combination may be more addicting than nearly any other appetizer that you've tasted lately.  The creamy, cheesy goodness is perfectly melted and then paired with the crispy, salty crunch of bacon.  It doesn't get much better than that.  Well...I guess it might when dipped in some ranch!

Day 2 of Emily Essentially's Super Bowl Snack Week features this ridiculously easy recipe video that contains only 2 ingredients.  Together they create the wonderfulness that is Bacon Wrapped Mozzarella Sticks!  Click on the video above to watch quick tutorial on how to create this scrumptious app for yourself.  Of it's course Keto-friendly (the whole goal of this week), yet everyone who's anyone will love them just the same!  Don't forget to watch yesterday's video (click here!) to learn how to make the ranch dipping sauce if you're a glutton for creamy sauces.

INGREDIENTS:

  • (12) Mozzarella String Cheese
  • (24) Bacon Slices
  • 2 Tbsp. Coconut Oil, to cook in
  • Toothpicks, to anchor bacon for cooking

Grab some individually packaged string cheese and a few packs of bacon and you should be all set!  Remember that the ratio for bacon to cheese is 2:1 - you'll need 2 pieces of bacon for every cheese stick.  It'll ensure you've got the cheese covered and won't be left with a melted mess!  Cook in the oil of your choice, but for those Keto-dieters - go with coconut oil, it'll cook evenly and keep you in Ketosis.  And even though toothpicks aren't an ingredient per say, you'll need two per mozzarella stick to anchor your bacon in place for cooking.  Simply remove once you're done, and you're ready to chow down!

Okay, so we know there are two major components to losing weight or transforming your body - diet and exercise.  Neither are particularly my strong suit.  Remember who you're talking to - the girl who proudly proclaims hot dogs and mac 'n' cheese as my favorite foods!  I also had the benefit of being a competitive cheerleader for the majority of my young adult life.  From the age of 14 to 24 I was either cheering or coaching cheerleaders, so that was plenty exercise to keep my metabolism fired up.
