Buffalo Cauliflower Bites + Keto Ranch

In case you've been living under a rock lately, I thought I'd remind you that this weekend is a pretty epic one for all those football fans out there - the SUPER BOWL!  Whether you really care about the two teams or not - I'm sure you've probably been invited to at least one Super Bowl party.  And with those parties comes all kinds of unhealthy and carb-ridden finger foods that are tailgating staples.  Since I've been doing great these first two weeks on the Keto Diet, I thought I'd create some Keto-friendly recipes you can bring to your parties that will please everyone AND keep you from cheating!  

I'm kicking off the first of the four videos today with Buffalo Cauliflower Bites + Keto Ranch!  Everyone loves something a little spicy, and ranch is basically the national dressing of America these days, so why not combine them into something delicious?  This bite-sized appetizer is perfect for a quick drive-by scoop-n-go before the commercials come on, and are so yummy that even non-Keto dieters will enjoy them too!  

The recipe video above will give you all the info you need to get started.  Bonus - the ranch used in this video will be the perfect Keto-friendly dipper for the next two videos as well, so double (or maybe triple if you've got some ranch-lovers) the recipe to ensure you've got plenty on your app platter.  Below you'll also find the recipe ingredients for the cauliflower and ranch dressing too in case you need to refer back!  And just because these may be great for your Super Bowl party, don't count this out as a flavorful Keto side to your lunch or dinner going forward!

BUFFALO CAULIFLOWER BITES INGREDIENTS:

  • 1 Head Cauliflower, split into bite size pieces
  • 1 Tbsp. Butter, melted
  • 1/2 Cup Hot Sauce
  • 1 tsp. Garlic Powder

KETO RANCH INGREDIENTS:

  • 1 Cup Mayo
  • 1/2 Cup Sour Cream
  • 1/4 Cup Heavy Cream
  • 2 Tbsp. Dried Parsley
  • 1/2 tsp. Dried Dill
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Onion Powder
  • 1/4 tsp. Basil
  • 1/4 tsp. Pepper
  • Salt, to taste
