Keto Cauliflower Pizza Casserole

This new Ketogenic eating regimen is no joke!  It's been a week, and I can successfully say I haven't cheated once.  No chips or unapproved sweets, no pastas and no pizza.  Well....that may be a bit of a stretch.  I did have some pizza in the form of this awesome Keto-friendly recipe I found from Ruled.Me!  

This recipe is easy, delicious and super healthy!  The cauliflower is a perfect substitute for the dough or noodles that you would find in a pizza or casserole.  And even though I'm a picky eater, it's nearly undetectable in the final product and adds substance to the meal.  My favorite part?  The SAUCE.  It's incredible (and addicting) and I'll be making it going forward to drizzle over meals  - its just that good.  

Keto Cauliflower Pizza Casserole is quite simple to prepare. First you'll steam the cauliflower lightly before assembling the entire casserole.  It'll continue to bake a bit more when you pop the casserole in the oven, so don't overdo it.  Save time by making the sauce while the cauliflower steams.  Once both are complete, all you have to do is layer the sauce on top of the cauliflower, and add the additional ingredients into your casserole dish, and voila!  Pop it into the oven and kick back to wait for the cheesy pizza goodness!

  • 1 Medium Head Cauliflower, split into small florets
  • 1 Tbsp. Butter
  • 1 Small Yellow Onion, diced
  • 2 Tbsp. Balsamic Vinegar
  • 1 Cup Heavy Cream
  • 6 oz. Cream Cheese, cut into large chunks
  • 3 Tbsp. Tomato Paste
  • 3 Cups Mozzarella Cheese, divided in thirds
  • 1/2 tsp. Dried Oregano
  • 1 Tbsp. Fresh Basil
  • 1 tsp. Sea Salt
  • 1/4 tsp. Freshly Ground Pepper
  • 3 oz. Sliced Pepperoni, divided in half
  • Red Pepper Flakes, to taste

It's as simple as that!  This was dinner for me and my boyfriend for almost the entire first week of the Keto diet.  He loved it so much he ate my last serving, but I forgive him since I know how yummy it was!  This is a huge thumbs up from me.  I'll be keeping this recipe in my arsenal on weeks that I'm craving some carbs, and this will keep me on track and in ketosis no problem!  Hope you enjoy!
